This is such a great opportunity to showcase the amazing skills of our chefs while at the same time allowing us to bring forward the true nature of Mexican culinary creations (you'll never look at America's "Mexican" fast food the same again...) Big flavors, savory flavors, regional flavors - the challenge will be to bring forward wines that will take those dishes to a higher level. We rose to the challenge last year - Chef Gio's ready to dream up new creations - and I can't wait to try coming up with wines to make those dishes sing as well as we did last year.
